Tasty and Healthy Taco Salad Meal

This delicious recipe calls for making your own Taco Spice, mixing the salad ingredients, and heating refried beans. Serve together on one plate - serves 4 with leftovers

INGREDIENTS

TACO SPICE RECIPE - much better than store bought

2 Tablespoon chili powder

1 tsp garlic powder

1 tsp onion powder

1¼ tsp crushed red chili flakes

1 tsp dried oregano

1 tsp paprika

3 tsp ground cumin

2 tsp sea salt

2 tsp black pepper

 

HEALTHY TACO SALAD RECIPE

1 lb ground beef – cooked with 1/4 red onion

1 tsp avocado oil

2 tbsp tacos seasoning

8 oz romaine lettuce - washed and torn

1 1/3 c grape tomatoes - halved

3/4 c Cheddar CHEESE - shredded

1 med avocado - diced

½ c green onions - chopped

1/3 c salsa (fire roasted or other)

1/3 c sour-cream or Greek yoghurt

1 1/2 cups tortilla chips (broken)

REFRIED BEANS

12 tsp avocado oil

1 can refried-beans

¼ red onion chopped finely

Sala ¼ to ½ cup  (same salsa as salad)

1 small can diced green chilies

DIRECTIONS

  1. Mix the ingredients for the taco spice. (use 2 heaping tbsp in the hamburger and save the rest for another day)

  2. Put oil in skillet, saute red onions and brown hamburger - med low/heat. Add taco spice and mix

  3. Combine salad ingredients - cooked and spiced hamburger, lettuce, tomatoes, cheese, avocado, green onions, salsa, Greek yoghurt

  4. For refried beans - saute red onion with avocado oil, add refried beans, diced green chilies and salsa

  5. Serve together on one plate - refried beans an be served on a layer of taco chips
