Mom’s Owen Family Potato Salad with Boiled Dressing

Dry dressing ingredients

½ tsp salt

1 tsp mustard

f.g cayenne

1/3 cup sugar

3 tbsp flour

 

Wet dressing ingredients

1 egg or two yolks

1 tbsp butter or oil

1 c milk or water

½ cup vinegar plus enough water to make 2/3 cup

 

Salad Ingredients (use these ratios for however many people you are serving and how much salad you will need)

Potatoes (4) – waxy – red or Yukon gold or like (or i ma told Russets are fine as well)

Green onions – 1 or 2

Hard boiled eggs (2)

Radishes – sliced for topping, diced for salad

Paprika

 

Instructions:

1.       For dressing - Mix dry ingredients in upper part of double boiler

2.       Add beaten egg and milk

3.       Add vinegar slowly

4.       Cook over boiling water stirring constantly until thick

5.       Remove from heat; add oil or butter; may be thinned with cream or whipped cream  

6.       Cook potatoes (whole or cubed) - Chop or mash potatoes when cooked

7.       Boil eggs - hard but not too hard – chop eggs

8.       Chop green onions and dice radishes - also slice radishes for topping

9.       Mix potatoes, eggs, green onions, diced radishes – add salad dressing to taste and mix

10.   Place in bowl – arrange sliced radishes on top and sprinkle with paprika

11.   Ratio of potato to dressing 4 cups to 1/3 cup dressing – or to taste – I probably like a bit more dressing
