Five Seed Bread
This recipe is for a Thermomix. Valerie has made it numerous times and it is excellent nutrient dense bread. Better than any store-bought bread we have ever had.
Ingredients
500 g water
2 tsp dried instant yeast or 20 g fresh yeast, crumbled
30 g extra virgin olive oil, plus extra for greasing
500 g baker's flour
1 tsp salt
50 g rolled oats
30 g sesame seeds, plus extra for sprinkling
30 g linseeds (flaxseeds), plus extra for sprinkling
30 g sunflower seeds, plus extra for sprinkling
30 g pumpkin seeds, plus extra for sprinkling
30 g poppy seeds, plus extra for sprinkling
30 g honey
PREPARATION
1. Place water and yeast into mixing bowl and warm 2 minutes 30 seconds/37 degrees C/speed 2. Meanwhile, grease a loaf pan (approx. 30cm x 12 CM X 10 cm and set aside).
2. Add bread flour, salt, rolled oats, sesame seeds, linseeds, sunflower seeds, pumpkin seeds and poppy seeds, honey and extrs virgin olive oil into mixing bowl and kneed 2 minutes, 30 seconds/4, Dough will have wet and sticky consistency. (see tip)
3. Transfer dough into prepared loaf tin and sprinkle with extra seeds (five types). Let rise uncovered in a warm place until double size (approx. 45 – 60 minutes). Meanwhile preheat oven to 200 degrees C – 395 F.
4. Bake for 40 to 45 minutes (395F/200C). Allow to cool in tin for five minutes. Transfer to a cooling rack and allow to cool before slicing.
